Unless someone here has a personal recommendation (unlikely)...take a look at the Driving Instructor's Association (DIA) website. It's far from guaranteeing you'll get a good instructor but it is fair to say anyone on the DIA list is a) properly qualified and b) likely to be serious about instructing and professional development.
Out of the c. 45,000 driving instructors in the UK only a minority belong to any sort of professional organisation - which I think it both surprising and quite telling.
