Over-taking a block of cars

....and how likely is it that one of them will decide to pull out just when you're part way through your overtake?

If you treat each as an individual overtake and exercise care it'd be no more likely than a 2 car overtake... But I'd rather take that risk than run along behind a train of cars doing 30 mph for mile after mile :)
