If you will fit, go for the single seater. You will get a much bigger buzz out of it than any production car.

My son did a Ferrari 360 experience there which involved a few laps in a Lotus Elise (Exige?) following by a few laps in a 360. He enjoyed it and it was quite professionally run, though you have a frustratingly short amount of time in the cars by comparison with say a drive-your-own track day.

If you have little experience of track driving, contrary to what the previous poster said, you may get more out of lapping with an instructor sitting beside you (ie in the Ferrari). On the other hand if you already have significant track experience, then as he says the single-seater may give a bigger thrill.
